Warm Roasted Vegetable and Halloumi Salad

Ingredients

  • 1 large red bell pepper
  • 1 large red onion
  • 1/2 courgette
  • Olive oil
  • 50g halloumi cheese
  • 3 Garlic clove
  • Salt, pepper, paprika to taste

Preparation

  • Chop the veg into bit size pieces, toss with teaspoon of olive and spices
  • Bake in 180°C for 20min
  • Meanwhile grill halloumi slices
  • Serve baked vegetable hot, with roasted halloumi an honey and mustard dressing
