Hearty and Healthy
Ingredients
- 1 large red bell pepper
- 1 large red onion
- 1/2 courgette
- Olive oil
- 50g halloumi cheese
- 3 Garlic clove
- Salt, pepper, paprika to taste
Preparation
- Chop the veg into bit size pieces, toss with teaspoon of olive and spices
- Bake in 180°C for 20min
- Meanwhile grill halloumi slices
- Serve baked vegetable hot, with roasted halloumi an honey and mustard dressing
