I love green curry!
Ingredients
- 1 can of coconut milk
- 1/2 can of vegetable stock
- 1 red bell pepper
- 200g broccoli
- 100g tofu
- 1 carrot
- 1 teaspoon oil
- 1 chili
- 2-3 teaspoon green curry paste
- 1 teaspoon lime juice
Preparation
- Slice the veg and tofu and stir fry for few minutes
- Add a can of coconut milk, stock, curry paste, chili and lime juice to taste
- Cook for 10-15 min until veg are soft but still has some crunch
