Quick Veggie & Tofu Stir-Fry

Ingredients

  • 1 red bell pepper
  • 1/2 small courgette
  • 5 mushrooms
  • 30g tofu
  • 1 teaspoon oil
  • 1 teaspoon lime juice
  • 1 teaspoon soy sauce
  • 1 teaspoon Sriracha
  • 1/3 chili
  • Spring onion

Preparation

  • Chop vegetable and tofu into bite-size pieces
  • Fry vegetable an tofu for few minutes, until tender/golden
  • Mix soy sauce, Sriracha and lime juice and pour over the tofu&veg mixture
  • Fry for another minute
  • Serve with chopped chilies, spring onion and sesame seeds
