Puff Pastry Parcels with Cheesy Spinach

If you think you don’t like spinach, this will change your mind

  • 250g of frozen puff pastry (or 3 slices)
  • 450g of spinach (fresh or frozen)
  • Large red onion
  • Whole red chili
  • 3 garlic cloves
  • 1/2 teaspoon of nutmeg
  • 50g of cheese (I used cheese triangles cause they melt well)
  • 50 grams of nuts (I used pine and pumpkin)
  • Oil for frying (with touch of butter for better taste)
  • Salt and pepper to taste (I add loads)
  • Milk or beaten egg to brush the pastry
  • Black sesame seed for decoration

  • Defrost the pastry and cut into 20cm (8inch suares), lay them in muffins tray
  • Fry finelly chopped onion, 2 min before end add finelly chopped garlic.
  • Add spinach and spices then cook until thick
  • Add cheese and let it melt
  • When spinach mixture cools down, adds the nuts
  • Fill the pastry with spinach mixture – then wrap all pastry corners in (see the pictures) – brush the pastry with egg or milk, sprinkle with seasamy sees
  • Bake for 20-25 minutes at 190°C (375°F)
  • Serve hot, but cold are delicious too!
