  • 500g baby potatoes
  • 1cup chopped parsley
  • 1cup chopped red onion
  • 100ml mayonnaise
  • Salt and paper


  • Cook the potatoes until tender but not mushy, leave to cool
  • Chop the potatoes to the bite size piece
  • Mix with onion, parsley and mayonese
  • Season generously with salt and fresh black pepper
  • Refrigerate for at least one hour to allow flavors to combine
