Oven-dried Tomatoes in Oil

Plum or Roma tomatoes work best

Ingredients

  • 2km plum or Roma tomatoes
  • 1 teaspoon kosher salt
  • Olive oil
  • Garlic

Preparation

  • Half the tomatoes and remove the tomato pulp/li>
  • Arrange a rack in the lowest part of the oven, sprinkle with salt.
  • Dry in 85°C for 4 to 6 hours
  • Cool the tomatoes to room temperature. Transfer them to jars, cover with the olive oil (MAKE SURE JARS ARE STERILIZED THEY THE TOMATOES TOTALLY COVERED BY OLIVE)
  • Place the closed jars in the 95°C oven for 20 min
