Linguine with tomatoes and vegetables sauce

  • 1 large eggplant
  • 1 medium onion
  • 1 small red bell pepper
  • 1 large tomato
  • 6 green or black olives
  • 3 medium mushrooms
  • 2 garlic cloves
  • 100g feta cheese
  • 1 spoon oil
  • salt, pepper, paprika, chili, oregano and basil


  • Heat olive oil over medium heat; add onion, cooking until tender. Stir in garlic, mushrooms, pepper and olives. Fry for another few minutes.
  • Add canned tomatoes. Bring sauce to a boil, cook until sauce is thick, about 20 minutes
  • Season with salt, pepper, paprika, chili, oregano and basil
  • Add cooked linguine, stir well. And enjoy!
