- 1 large eggplant
- 1 medium onion
- 1 small red bell pepper
- 1 large tomato
- 6 green or black olives
- 3 medium mushrooms
- 2 garlic cloves
- 100g feta cheese
- 1 spoon oil
- salt, pepper, paprika, chili, oregano and basil
- Heat olive oil over medium heat; add onion, cooking until tender. Stir in garlic, mushrooms, pepper and olives. Fry for another few minutes.
- Add canned tomatoes. Bring sauce to a boil, cook until sauce is thick, about 20 minutes
- Season with salt, pepper, paprika, chili, oregano and basil
- Add cooked linguine, stir well. And enjoy!
