Light Green Curry

My favorite!

Ingredients

  • 1 can of light coconut milk
  • 1 red bell pepper
  • 200g broccoli
  • 100g tofu
  • 1 carrot
  • 1 teaspoon oil
  • 1 chili
  • 2-3 teaspoon green curry paste
  • 1-1 teaspoon lime juice

Preparation

  • Slice the veg and tofu and stir fry for few minutes
  • Add a can of coconut milk, curry paste, chili and lime juice to taste
  • Cook for 10-15 min until veg are soft but still has some crunch
