Gnocchi with tomato and vegetable sauce

Italian dinner ready in 45 min

  • 500g gnocchi
  • 2 large onions
  • 4-6 mushrooms
  • 10 black olives
  • 1 red pepper
  • 1 chili pepper
  • 3 garlic cloves
  • 1 can of tomatoes
  • 100g of tomato paste
  • Salt, pepper, oregano and basil to taste
  • grated cheese for serving

Preparation

  • Fry finely chopped onion, mushrooms and peppers on a little bit of oil, until brown.
  • Add chopped garlic, and fry for another 1-2 minutes (do not burn it!)
  • Add tomatoes can, tomato paste and olives, and cook for 30 min, until tomatoes break the sauce thickens
  • Season with salt, pepper, basil and oregano
  • Cook gnocchi according to package directions and keep warm, add them to hot sauce and mix well
  • Serve with grated cheese – preferably Parmesan
