4 Ingredients Frittata – but you can always add anything you like to it!


  • 3 large floury potatoes
  • 2 large onions
  • 4 eggs
  • Handful of cheese (mozarella, cheddar, pasrnesan, feta… whatever you have in you fridge)
  • Garlic, salt, pepper and fav herbs for seasoning
  • Optional Extras – olives, sundried tomatoes, bell peppers, sausages, cherry tomatoes – whatever you like/have


  • Peel the potatoes, cut them into thick slices, and cook for few minutes untill half cooked
  • While potates are cooking, slice the onions and quickly fry them
  • Layer the baking dish with potatoes and fried onions
  • Beat the eggs, add salt and pepper and fav herbs to taste, then mix with half of the grated cheese
  • Pour the egg mix over the potatos and onion then sprincle with remaining cheese
  • Bake for 20-25 min in 200°C
  • Serve hot or cold
